Wash and cut a few potatoes into quarter inch thick chunks. Note: Potato skins have many nutrients, so it is wiser to leave their skins on. You may ofcourse want to use a vegetable cleaning brush to ensure you have removed all the dirt off the skins and well-cleaned them.

Now, put the potato chunks in a contained, add some oilve oil to it (around 1 tb.sp. for a lb. of cut potatoes should be enough) and sprinkle some rosemary and chives over it. Mix them well, so that you have this oil and herb mix well-covering all the potatoes.

Pre-heat the oven. Then bake the above potato mix at 375 degree till well done. The potatoes should look a nice golden brown. You may want to turn them a bit thru the baking to make sure all the sides of the potatoes are equally well-baked. You can garnish this dish with some fresh parsley or cilantro and serve with some fresh cut cherry tomatoes with a hint of freshly grated parmesan for a truly gourmet look and taste.
